The Mushroom That Cannot Be Farmed is Zine No. 75 in the Stimpunks Star Stuff series, filed in Star Stuff — one settled, checkable fact followed until the belonging claim is already inside it. Companion to Oblivious to Encounter (No. 74), which follows the same mushroom the other way, into how scalability was built; and to A Field Guide to Third Nature (No. 21), which catalogues the habitats. This one stays in the nose.

The Mushroom at the End of the World: On the Possibility of Life in Capitalist Ruins (Princeton University Press, 2015) — read in the primary; source of “the autumn aroma,” the first-encounter passage (“It’s not an easy smell… Many people never learn to love it… Some people liken it to rotting things and some to clear beauty”), the Smelling interlude on deer, bears and the elk with bloody muzzles, the note that “slugs, other fungi, and many kinds of soil bacteria are repulsed by the smell, moving out of its range,” and the observation that the general term persists because “the dynamics of speciation are still unclear.” Aroma chemistry — that 1-octen-3-ol and methyl cinnamate are the two major volatiles of matsutake mycelia and fruiting bodies, that the wider profile includes 1-octen-3-one, 3-octanone, 3-octanol, (E)-2-octenal, benzaldehyde, phenylacetaldehyde, linalool and methional, and that methyl cinnamate and 1-octen-3-ol both decline as the fruiting body ages, are taken from the food-chemistry literature on T. matsutake volatiles (gas chromatography–olfactometry and HS-SPME-GC-MS studies) at abstract and summary level rather than from any single paper read in full. The springtail result — that 1-octen-3-ol and methyl cinnamate repel the mycophagous Proisotoma minuta — is likewise cited from its abstract. Cultivation — Yamanaka, T., Yamada, A. & Furukawa, H. (2020). “Advances in the cultivation of the highly-prized ectomycorrhizal mushroom Tricholoma matsutake,” Mycoscience 61(2), 49–57, for “the cultivation of matsutake has been mostly unsuccessful” and the field successes using already-colonised pine; used at abstract level, as in No. 74.
Held honestly. Four things. One, and it is the big one: no study connects matsutake aroma to odorant receptor genotype. The receptor work is general and names other molecules; Tsing’s observation that people split between “rotting things” and “clear beauty” is ethnography gathered over years of fieldwork, not a controlled study. Joining them is this zine’s move, and it is a plausible mechanism rather than a demonstrated one — said on spread 8 and again in the refusals, because a piece about not overstating what arrived should not overstate its own case. Two: both receptor papers are read at their abstracts. Everything quoted is in those abstracts verbatim; nothing is characterised from the bodies, which are paywalled. Three: the aroma chemistry is assembled from several studies at summary level rather than one primary, and the relative importance of individual compounds varies between them by method, maturity and geography — so the zine names the two dominant volatiles and does not rank the rest. Four: “most expensive food on earth” is deliberately softened to “among the most expensive,” and no price is printed, because matsutake prices swing by an order of magnitude with season, origin and grade, and a figure would be obsolete before the page was.
The star stuff is Carl Sagan’s, and the SN 1006 remnant on every Stimpunks page. The carbon in 1-octen-3-ol and the carbon in the receptor that fails to bind it were made in the same furnaces. The universe doesn’t pathologize its own variation — and it never issued a reference nose.
